Oh yeah, I wonder why - the Witmark demo version on The Bootleg Series #7 is identical so Dylan obviously had no trouble playing it.

That's not true, Bruce Langhorne was at the session but that is unmistakably Dylan playing, listen to "Suze (The Cough Song)," "Girl From the North Country," or "Cocaine" (Live at the Gaslight), you'll see that it's his picking style.
