actually I think it would be difficult to classify what "Egyptian" fool is because we eat it about 50 different ways. With cumin and lemon, with chili oil, with tomatoes/garlic vinegar, with eggs, with hummus, with tehina, with yogurt, with feta cheese it's quite endless.

Hi Dede, My sis went to Bilad al-sham recently on a work trip and I asked her to get me Ful, which I had enjoyed from the pushcarts on the streets in Cairo some years ago as a tourist. She's got me a kilo of beans from a Damascus grocery with the skin on them and slightly split open. I have no idea of how to process them.Can you help?( we're hindus from India, who are very familiar with chickpeas, ( soak them overnight and pressure-cook them) but have no idea of what to do with fava beans.
